Re-hydrating and Preparing Dried Seafood

1.) 花膠用水漫一夜。
Soak dried fish maw in water overnight.

2.) 放入滾水內至滾，關火，加蓋焗至水涼。放於冷水下啤水。
• Put the soaked fish maw into boiling water. Bring to the boil again. Remove from heat and set aside with the lid covered. Leave it until the water is cool. Rinse the
dried fish maw under running tap.

3.) 燒滾水，放入花膠再焗，重覆此步驟多次，直至花膠完全發漲，然後去掉污垢。
Then bring the water to the boil again. Put in the fish maw. Set aside with the lid
covered. Repeat this step several times until the dried fish maw expands and softens completely. Remove the dirts from the fish maw.
